Oat & Date Cookies (made with ghee)

Healthy cookies with the irresistible aroma of fresh ghee. Tasty at the same time nourishing!

Makes 8 cookies

Whole wheat flour 1/2 cup
Rolled Oats (coarsely ground) 1/2 cup
Baking soda 1/4 tsp
Cardamom powder , 1/4 tsp
Vanilla powder 1/4 tsp
Salt a pinch

To grind in blender-
Dates 3
Milk 2 tsp
Ghee melted 3 tsp
Soaked almonds 12
Soaked Saffron few strands

Mix wet with the dry ingredients and mix thoroughly. Shape into cookies, press slightly and bake for 15 mins at 180 deg F

Oatmeal Raisin Cookie Granola

Makes 6 cups of Granola

3 cups large flake oats
1 cup whole wheat flour
1/2 teaspoon baking soda
1/4 teaspoon sea salt
2 teaspoons cinnamon
3/4 teaspoon cloves
1 cup raisins
1/2 cup pure maple syrup
1/2 cup sunflower oil
2 teaspoons vanilla extract
Directions

Preheat the oven to 350F. In a large mixing bowl, combine the oats, flour, baking soda, sea salt, cinnamon, cloves and raisins. Add the maple syrup, sunflower oil and vanilla extract. Mix until everything is combined. Place the cookie mixture onto a parchment lined baking sheet and bake for 13-15 minutes, turning the granola over half way through the baking time. Granola is ready when it is nice and golden brown. Store in a mason jar or airtight container.
