Pumpkin 1 cup
Zucchini 1 large, skinned and chopped
Onion 2 tbsp
Garlic 1 pod
Sun dried tomato 2 pieces
Dried basil 1/2 tsp
coriander powder 1/2 tsp (optional)
Vegetable stock powder (I used Massels) 1/4 tsp
Pasta shells cooked 2 cups
Put oil in a pressure cooker.
Add the garlic and onion and sauté
Put pumpkin,zucchini, olive, sun dried tomato ,coriander powderand sauté.
Add 1/2 cup water, stock powder/cube and dried basil. Pressure cook for 2-3 sounds.
Blend to a purée. Stir through pasta and serve hot.
Yum. Thumbs up from the adults as well as the 15 month old.
Can add chilli flakes at the table to make it spicy for adults.
Add grated mozzarella/ cheddar if you want.
Apple(red delicious) 1
Maple syrup 1/2 tsp (optional)
Whole wheat flour 1cup
Baking soda 1/4 tsp
Stew apple, raisins and date in1/2 cup water till apples are soft. Set aside to cool and blend to a purée.
Mix the purée with flour, baking soda, maple syrup and salt. Add water to get a batter consistency.
Make pancakes with butter . Serve hot with a cup of chai.
Mildly sweet pancakes perfect for a cold autumn morning. Drizzle with maple syrup if you want it sweeter. It was perfect for us as it is.
Makes 5 pancakes
Self raising flour 11/4 cup
Milk powder 1/4 cup
Baking soda 1/2 tsp
Into a Blender-
Banana 1 large
Olive oil 1/4 cup
Yogurt 1/4 cup
Raw sugar 3/4 cup
Cocoa pwdr 1/4 cup
Vanilla essence 1/2 tsp
Almond essence 4 drops
Milk 2 tbsp (to be added if the resulting batter is too dry)
Fold wet mixture into the dry ingredients and fold in. Mix through half chocolate chips, pour into loaf pan & sprinkle rest on top.
Bake for 40 mins – 160 F
Note- the batter is very thick and gooey but bakes beautifully!
Coriander 1 bunch
Onion chop 1 tbsp
Garlic chop 1 pod
Raisins 1 tsp
Coconut 1 tsp
In a little oil, sauté the garlic onion and coconut for 30 seconds. Add coriander, raisins and toss.
Grind in mixer till smooth. Salt to taste.
Serve with roti, dosa or as a dip!
