This is a quick lunch or dinner that can be thrown together in 15 minutes. And the raita adds a special touch. I have made is less spicy as I now make one dinner for us and my 1 year old baby. But you can of course up the amp with more spices and seasonings. Just add whatever you want after the eggplant is cook and before the rice is added stage.
Eggplant 1 large cubed
Tomato 2 chopped
Paneer (Indian cottage cheese) 1 cup cubed and shallow fried 1 tbsp in oil)
Turmeric 1/4 tsp
Coriander pwdr 1 tsp
Cumin pwdr 1 tsp
Chilli pwdr 1/2 tsp
Rice 2 cups
In a pan, add oil. Sauté tomatoes, eggplant till cooked.
Add the coriander,cumin and turmeric powders. Sauté till oil starts oozing out from the mixture. Add washed rice and stir for 1 min.
Add water and salt to taste and cook covered till done.
Serve with cucumber raita.
