Tofu Mushroom masala

Tofu 250 gms
Tomato 2 ripe
Red capsicum 1 small (optional)
Onion 1
Garlic 2 pods
Mushroom sliced
Baby spinach 1 cup
coriander pwdr 1 tsp
Cumin pwdr 1/2 tsp
Tava fry masala or Garam masala- 1/2 tsp
Kasuri methi (dry fenugreek leaves) 1/2 tsp, crushed
Coriander leaves, to garnish
Oil
salt

Tofu is cut into cubes and soaked in warm water for 5 mins. Then drained and shallow fried in 2 tsp oil. keep aside.

Take garlic tomato capsicum and onion and grind to a paste in mixie
Oil in wok, pour puréed mixture. Sauté till oil starts separating. Add the coriander powder, cumin powder and salt.Add mushrooms and baby spinach sauté.
Now add the tofu that’s been shallow fried already, put Garam masala or tava fry masala and add water to get desired consistency. Cover and simmer for 5 mins. Add kasuri methi and fresh coriander leaves and mix well.
Serve with roti or rice.
