Baby spinach, avocado and strawberry salad

This is a tasty light lunch or dinner salad. I ate this last night for dinner with 2 slices of a vegetarian pizza. Perfect for a summer night, as the weather gets warmer here, I’m craving more cool and light salads. Balsamic vinegar can be used instead of lemon juice.

Baby spinach leaves 1 cup
Strawberries halved 5
Avocado sliced, 1/4 of a big one
Lemon juice 1 tbsp
Olive oil 1 tsp
salt to taste

Assembly:
Layer the avocados and strawberries on a bed of spinach. Mix lemon juice and olive oil and pour on top. Sprinkle with salt.
