Decadent Chocolate cake with chocolate & strawberry frosting


This is a slight variation to my best vegan chocolate cake I use. Made it for a friends tea party… This is an indulgent cake and no one will guess it’s vegan.

Recipe as follows:
1&1/4 cups whole wheat flour
3/4 cup sugar
1/3 cup unsweetened cocoa powder
1 tsp baking soda
1/4 tsp salt
3/4 cup warm water mixed with 1 tsp instant coffee powder
1/2 cup homemade apple sauce (from 1 small apple)*
1 tsp vanilla extract
2 tbsp canola oil
1 tsp apple cider vinegar

Chocolate Glaze
1/4 cup sugar
1 tsp margarine
2 tbsp almond milk
2 tbsp unsweetened cocoa powder
1/4 tsp vanilla extract

Preheat the oven to 350 degrees F.
Mix together flour, baking soda, and salt making sure it is really blended together.keep aside.
Add the water, vanilla, oil, sugar,cocoa, and vinegar in a bowl.
Pour the wet ingredients into dry mixture and fold in. Bake at 180 C for 30 mins.
Allow to cool for 2 hours or overnight.

In a pan, mix cocoa, milk, butter and sugar. Turn the heat on and keep stirring till sugar melts and bubbles appear on top of the sauce. It will get a glossy look. Turn off heat, add the vanilla essence.
Pour over the cake and spread along sides. Decorate with strawberries. Chill in fridge.

Tip: This cake tastes even more rich and flavorful the day after it’s made.

*Homemade apple sauce: 1 apple makes 1/2 cup sauce
Peel and dice 1 small apple.put in a pan with half cup water and 1 /2 tsp cinnamon pwdr(optional)
Cover and cook for 10 mins till soft. Puree and use.
Storage- Home-made apple sauce can be stored in the fridge and used within 3 days.


Baby spinach, avocado and strawberry salad


This is a tasty light lunch or dinner salad. I ate this last night for dinner with 2 slices of a vegetarian pizza. Perfect for a summer night, as the weather gets warmer here, I’m craving more cool and light salads. Balsamic vinegar can be used instead of lemon juice.

Baby spinach leaves 1 cup
Strawberries halved 5
Avocado sliced, 1/4 of a big one
Lemon juice 1 tbsp
Olive oil 1 tsp
salt to taste

Layer the avocados and strawberries on a bed of spinach. Mix lemon juice and olive oil and pour on top. Sprinkle with salt.

Best Vegan Chocolate Cake


This is such a fail proof recipe , easy and quick using items that are regular pantry ingredients.
Can be frosted or eaten as it is. And the best part, it’s egg free,butter less and vegan. No one will ever guess its vegan, just don’t tell them!!!

Cake Ingredients

Recipe tips:
Non vegans don’t have to use almond or soy milk or margarine, you can use butter in place of the margarine, and whatever milk you prefer in place of the almond or soy.
I used 1 tsp of expresso coffee granules in the warm water to give it a deeper flavour.
Can use apple puree instead of oil to make it fat-free.

Healthy Brekky Banana Bread

This is a low fat,low sugar,butter less,egg fee, vegan bread. So healthy and hearty for breakfast or a snack.
This is a guilt free treat, with a cuppa green tea and a good friend.

1 cup whole wheat flour(atta)
1/4 teaspoon salt
1/2 teaspoon baking soda
1 tsp cinnamon pwdr

2 ripe bananas, mashed with fork or blended
4 tbsp canola oil
1/4 cup maple syrup (or 1/4 cup sugar)
1/4 cup almond milk (or normal milk or buttermilk)
1 tsp vanilla essence

Preheat oven to 375 degrees. Mix all dry ingredients first.
Mix wet ingreds in a separate bowl.
Pour wet mixture into dry ingreds and fold with a spatula, immediately put into oven to bake. Bake 20 mins.
Use a knife to check the middle. If it sticks, keep baking for another 5 mins.

Recipe Substitutions:

You can cut the amount of sweetener down to your taste.
Quinoa or brown rice flour can replace the wheat flour to go gluten-free
You can olive oil or vegetable oil. I made it with as little as 1 tablespoon of oil for a low-fat banana bread.
For dessert, throw in a handful of chocolate chips and shredded coconut!
This recipe is also great for muffins. Muffins take 15 minutes until done

Additions: Any of the below can be added for variation and to make it super healthy::
Walnuts chopped
Chopped dates
Almond slices
Pecans chopped
Dried Cherry
Pureed fresh strawberries swirled through
Pureed fresh raspberries for a marbled effect
Flax meal



Mocha Chocolate Banana Bread

This is a moist and flavorful decadent bread that tastes just like chocolate cake . The coffee adds to the overall oomph factor but feel free to leave it out. This recipe is adapted from , one of my favorite vegan blogs. I love the recipes there, I love the writer and how compassionate and real she is and I feel so connected to Tiffany as a person even though we live continents apart!

I made this for a mothers group meeting we had, not a crumb left I tell you.
Make it, eat it and share the love.

SR flour 1 cup
Salt ,under 1/4 tsp
Cocoa pwdr 5 heaped tsp
Raw sugar 1/2 cup (Acc to taste)
Bananas 2 ripe
Canola oil 1/4 cup
Almond milk 1/4 cup
Vanilla essence 1 tsp
Instant coffee decoction 1/3 cup

Blend bananas,oil and cocoa powder in mixer. Add this mixture to a bowl, add the coffee decoction, almond milk, and vanilla essence. Mix well.
Add the sugar set and mix it in.
Finally fold in the flour quickly. Do not over mix. Sprinkle some raw sugar on top for added crunch (optional)
Bake in preheated oven at 160-170 degrees for 35-40 minutes.
Cool and slice.
